You seem to be arguing that, if we are ignorant of a small detail regarding a large thing (history, evolution, or cosmology, say), we can't possibly know the large thing in its entirety. On the surface, this makes a kind of sense. If X is composed of 5 parts, and you only know about 4 of those parts, then you don't know X but something else, something less significant.

The problem is that this mischaracterizes why science is at all successful. In fact, we're able to know about large things precisely because we don't know the details. The power of science is in abstracting away those details which obscure underlying truths.

Take this here internet thing which you're using to proselytize. You surely believe it exists. Well, the internet runs on computers, of course, and at their heart computers are made of transistors, which are built out of semiconductors. Semiconductors are useful because, depending on what you do to them, they can either pass or block current. This means semiconductors can create switches, which is where the digital part of a digital computer comes from.

Well, in order to create transistors out of semiconductors, scientists at Bell Labs had to understand solid state physics--the quantum mechanics of big hunks of stuff. Since there are something like a million billion billion particles moving around in any reasonably sized hunk of material, and each one is governed by an evolving wavefunction, the task of understanding a solid seems somewhat hopeless.

But that's where the power of abstraction comes in. You can pretend, mathematically, that a solid is an infinitely big, symmetric crystal and ignore the vast majority of stuff in that crystal. Doing so lets you find solutions that give rise to what's known as band theory, where you act as if a solid has only a couple broad energy levels that are relevant for your purposes. With this theory and understanding, you can (and the scientists at Bell Labs did) build transistors that eventually lead you to this here internet.

You can only do that, however, by explicitly ignoring most of what's in an object, by pretending the individual atoms and electrons don't matter. They are there, but focusing on them means you miss the forest for the trees. It is only through abstraction, through forgetting about the details of so and so's 10th grandfather, that we can find the underlying rules.
