If the Gaians always go first, is there a way for the creator to not play the Gains?

Don't include Gaians as a human player and you can start with whomever you wish.
If you want to create a game with human Gaians, just start the game and when time comes to play the first Gaian turn, choose Save and Exit and ship the .SAV to your Gaia player.
