size: usually standard -- larger tends to make the game get goofy for me when the other factions try to talk to me in a highly developed world. dunno why, 64 megs on a 200 should be fine 8-)
water: maximum -- I'm an old Civ pro, so I know all the ins and outs of Archers n' Chariots. Any AI on the same continent is just so much meat for my empire, and if I have the biggest empire right from the start, where's the fun?
native life: min -- native life favors the player, so I minimize it
other environment stuff: doesn't much matterI dissallow the victories by transcendence and diplomacy these days, I get them way to easily.
I don't do "Do or Die" doesn't much matter with "Time Warp" anyways. Ditto "Look First."
I like "Tech Stagnation" as that keeps me from getting a tech every 3-4 turns until much later. At which point I'm probably unstoppable.
Yes to "Spoils of War" which allows the AIs to steal my tech when they capture mu bases. I usualy get HSA, so it's to their advantage.
No to "Blind Research" as, being an analytical being, I'm not nearly as blind as the AI is. Hence, BR is a big plus to a human.
No the "Intenese Rivalry" so that the poor little AIs get a chance to grow. The earlier the war, the more likely I'll sweep them. Did I mention the Archers n' Chariots? 
Seeing the map doesn't matter much
No Unity scattering + Time warp = no pods in game! Pods are a big plus for the human. Besides, I seem to be able to out expand even Transcendentally advantaged AI, so the Time Warp literally makes sure some of the AIs can start ahead of me!
I use the Bell curve, as the AI just can't handle random events as well as I.
Iron man, of course 
I'd like to use the randomize leader stuff, but the data on leader personality and agendas isn't easily accessible in the game, except when you talk them. And then I have to pay them, when I just want to check what they like, and whether I want to adopt those ideals to get friendlier with them? sigh. Maybe next version
