But suppose I don't want to play againt six other factions...
Are there any settings I can change so I'm only playing againt two or three other factions?

I think you already posted this, ddandb.
Anyway, playing against fewer factions was probaly left out because it inhibits gameplay. Without the Spartans, Hive or Believers to contain the UoP, they could run rampant. Without the PKs and the Spartans to keep the Hive in check, there would be millions of mindless Yangites in no time.
And so on. Each faction plays off one another, and with one or two missing some things can get out of control.
