how i play the full game?

There is only one way to play the game... there are no "game levels" as such, it's just one complete game. There *are* different levels of *difficulty*, which you can set during the opening screens.
If you use the Quick Start option, it misses out all the configuration screens and just starts you with the most recently used set of options, so that you don't have to keep selecting options every time you start.
So, when you start up the game, instead of choosing Quick Start, choose Start Game, and you will then get all the various options, such as what size of planet you want to use, how much ocean coverage, which faction you want to play and at what difficulty level.

When you ask how to play the full game, do you mean playing more than the 100 turns in the demo version?
If so, the answer is: buy the full game.
