How do you change from the Demo desktop Icon with the red dots in it to the Regular game Icon?

Don't know, but I guess you could always right click it and edit the properties to point to the Regulqar Game .exe file.

When I go the change Icon route, a nice looking Icon comes up in the window to apply but after I apply it, I still get the feable red dotted Icon on my desktop.
