How do I install the "better" graphics of SMAC?

What do you mean "better" graphics?
The game does not support 3D. The only other way is to change your resolution from 800 x 600 to 1024 x 768.

I mean the alternative graphics to SMAC, the ones that are in the 2.0 demo.

When you say "better graphics", do you mean higher resolution? Or do you mean the graphics that will make your game faster?
Open up the CD and go into the folder "Alternative Art". Then go into the Low Res Caviar, and copy everything there. Go to where terran.exe is located for you (\Program Files\Firaxis Games\Sid Meier's Alpha Centauri), and paste what you copied.
Start the game, and hopefully the graphics will not be as good, , but the game will move faster .

Thank you Victor, but now how do I undo the low res graphics? And turn it to the high but slow game one?

I'd suggest re-installing...Prolly be the quickest way to do it..
