I noticed in the demo civilopedia that there are psi things you can add to normal units chassis. Can someone with the full game tell me whether they offer any bonus or just mean you can have faster mindworms?

No, It just Lets you engage in Psi combat against your opponent. Psi Weapons means you attack using psi (like a mindworm), while Psi Armor means you defend with psi (like against a mind worm).
